1 ½ cups chicken broth
1 tbs. parsley flakes
1/3 cup grated reduced-fat sharp cheddar cheese (optional)

Preparation

Heat broth, parsley and potatoes in medium saucepan until boiling. Reduce heat to Low and let simmer, uncovered, until water evaporates and potatoes are tender (about 15 minutes). Add choose if desired.
